Vada Koottu Curry -Trivandrum Sadya Style Vada Koottu Curry Recipe
Ingredients :
For Vada
Whole urad dal: 1/2 cup (Soak urad dal in enough water for 3-4 hrs)
Crushed Black peppercorns: 1/2 tsp (Optional)
Ginger:1 small piece (finely chopped)
Green Chillies: 1(finely chopped)
Curry Leaves: few(finely chopped)
Salt to taste
Coconut oil/Cooking oil: To deep fry

For Gravy/Koottu Curry:
Potato: 3 small (cut into medium cubes)
Onion: 1 small (thinly sliced) or Small Red Onion: 1 cup (Sliced)
Green chilies: 2–3 (slit lengthwise)
Crushed ginger: 2 tsp
Curry leaves: 1 sprig
Turmeric powder: 1/2 tsp
Red chilly powder: 1 tsp.
Coriander powder : 3 tsp
Garam masala powder: 1 tsp
Black Pepper Powder: 1/4 tsp
Thin coconut milk: 2-3 cups
Thick coconut milk: 1/2-3/4 cup
Salt to taste

For the Seasoning :
Coconut oil: 2 tsp
Mustard seeds: 1/2 tsp
Urad Dhal : 1/2 tsp (Optional)
Dry red chilies: 3-4 broken
Shallots/Small red Onion: 5-6 (sliced)

Idiyappam-Noolappam-String hopper is a popular, healthy culinary specialty from the South Indian. Normally, the dough used for idiyappam is made of salted water, oil, and roasted rice flour but this recipe dough is made with cooked/leftover rice and rice flour. The formed dough is pressed into thin bunches of noodles using a tool called an idiyappam presser/mold. The pressed noodle bunches are then steamed. These white rice noodles are often served on a large platter alongside an array of flavorful side dishes like Vegetable Kurma, Ishtoo/Stew, Egg Roast, or any Spicy Veg or Non-Veg Curries.
