Instant Pot Puttu with video and step by step method.
Hi all, How are you? Today featuring Kerala’s popular breakfast Puttu in Instant Pot. If you are not sure what’s Puttu, let me brief you.
Puttu is a popular healthy delicious breakfast that originates from the southern Indian state of Kerala. It is usually made from rice flour, grated coconut and steamed in puttu maker.Yes, it is as simple as that. Usually, Kerala puttu is made using the puttu maker – cylindrical shape steamer or with the round coconut shell shaped ones-chiratta puttu maker. We can make without puttu maker too.

Preparing puttu in Instant Pot is just like the normal traditional puttu. Tastes the same and very moist and soft as well. It won’t have the shape of our traditional Kerala Puttu, because this is made in a flat bowl. To make puttu in Instant pot, you need a steamer basket or flat bowl with the steam rack trivet.
I have tried both with the steamer basket and on the regular stainless steel flat bowl, it turned out little soggy for me, I guess because it’s doesn’t have any whole in the bowl. Whereas, using the steamer basket, it turned out perfect. The holes in the steamer basket spread the steam evenly and keep it moist.
So, I highly suggest you use the steamer basket, or if you don’t have a steamer basket just try with the regular flat stainless steel bowl with a steam rack trivet with slightly raised edges. You can find a steamer basket in online Amazon online. I bought it from here.
Puttu pairs well with a Kadala Curry-Black Chickpeas Curry or banana with sugar, ghee, or with cooked Cherupayar Curry/Green gram dal for a balanced and a filling meal.

Equipment
- Instant Pot
Ingredients
- 1 cup Pachari /Rice flour or Puttu Podi Use either the white rice flour or red rice flour(chemba puttu podi). I have used the red variety Double horse chemba puttu podi
- 1 cup Freshly Grated Coconut
- 1/2 tsp Salt or accordingly
- 1 cup Warm Water or enough to moisten the flour
Instructions
- Mix the rice flour/puttu podi and salt well together.
- If you prefer mix 1 tbsp of grated coconut along with rice flour and mix well. (This step is purely optional)
- Wet the puttu podi/powder, Sprinkle little warm water at a time, and mix well till you reach breadcrumbs consistency.
- The rice flour mixture should be wet but not lumpy.We are looking for a crumbly and moist flour consistency.
- The right consistency is reached when you press little flour in your fist and it forms a shape and not crumble off.
- Spread 1/2 of the prepared rice flour mixture/puttu podi in the steamer rack or in a flat bowl evenly.
- Now spread 1/4 cup of the grated coconut. You can add or reduce the coconut accordingly per your preference. We are forming an alternate layer of rice flour/puttu podi and grated coconut.
- Add the remaining rice flour/puttu podi followed by the grated coconut.
- Add 1 cup of water to the inner pot of the Instant Pot.
- Place the steam rack trivet, and then the steamer basket with puttu on top of it.
- Close the Instant pot and make sure the vent is in the sealing position.
- Select the pressure cook mode and pressure cook the puttu for 5 minutes at high-pressure mode and let the pressure release naturally.
- While opening the lid, make sure the water from the lid doesn't gets into the puttu. So open the lid quickly and move it away from the puttu.
- The pressure releases fast. Mine went down in 10 minutes. Let the puttu cool for 5 minutes and gently mix.It will be very hot, so be careful while taking out the steamer basket.
- Serve hot with Kadalakari -Kerala Style Black Chickpea Curry or Cherupayar Curry-Green gram Curry or pappadam and yellow small bananas or in your desired way with sugar and Enjoy!
Notes
- If you are using white rice puttu podi/powder, then pressure cook it for 3 to 4 minutes. But if you are using red rice-based puttu powder or wheat or ragi, steam it for 5 to 8 minutes.
- The rice flour mixture should be wet but not lumpy. We are looking for a crumbly and moist flour consistency The right consistency is reached when you press little flour in your fist and it forms a shape and not crumble off.
- I have tried on steam mode as well, but I liked the pressure mode, cause, it turns softer moist than cooking in steam mode. If you wish you can try in the steam mode as well.
