As soon as I read the title of this recipe, I knew this recipe is  pretty much guaranteed to be a hit in our house. Who doesn’t love noodles?  Thanks to mummy ka magic for such a phenomenal idea! This is a very simple snack incredibly easy to make and they are sure to be a hit at just about any gathering. I cooked these with spaghetti  but originally recipe calls for ramen noodles.
Noodles cutlets is a combination of cooked noodles and different cooked vegetables which is mildly spiced  and coated  in bread crumbs and shallow or deep-fried in oil. These cutlet are super easy to make but they are absolutely  delicious. You can serve these as tea time snacks or even as breakfast with buns/burger  or as a bite size appetizers . Just look at the pictures, don’t you agree? I made these treats for a get together with friends and once they were set out on the table, they did not last long. And I’m dedicating this to all my friends, specially to Preeti.  Wondering what for dedication? 🙂 shhhh…it’s a secret 🙂 also I played guess what game with this dish and Preeti is the first person to find it out correctly 🙂

How to make Spaghetti Noodles Cutlet – Maggi Noodle Cutlet :
Cook the noodles according the instructions in the package.Make sure it’s not over cooked. Drain water and wash it immediately under running cold water to remove the excess starch.(Note : This stops the cooking process and prevents the noodles from getting too soft and soggy.) Add a tbsp of oil to the cooled noodles and keep aside.Take a large bowl. Add boiled corn, carrot and green peas to it. Mast it properly with the help of your hands. Add boiled noodles to it and mast it.
Grate the cheese. Add 2 tbsp gram flour to it and combine and mix it properly. Now add roasted cumin powder, salt to taste, chilli flakes, minced ginger-garlic, garam masala or chicken masala powder, turmeric powder, grated cheese to the mashed noodles. Add 2 tbsp milk and mash well it again. Do a quick taste check now and adjust the seasoning as per your taste.Take bread crumbs in a plate. Divide the mixture into equal portions and shape them into balls and further press them lightly to make cutlets. Coat each cutlet evenly with bread crumbs.
Now heat 2-3 tbsp oil in a non-stick pan. Place these cutlets on the pan and shallow fry, turning sides, till they turn golden brown on both sides. Drain on absorbent paper. Transfer to a serving plate and serve hot with tomato ketchup or with green chutney and Enjoy!

Ingredients
- Noodles/Spaghetti : 2 cups cooked
- Carrot :1 small chopped finely & boiled
- Green Peas : 1/4 cup boiled
- Sweet corn : 1/4 cup boiled
- Garlic : 1-2 small clove minced
- Ginger : 1/2 inch minced
- Gram flour/Besan : 2 tbsp
- Roasted Cumin powder : 1tsp
- Red Chilli flakes : 1 tsp
- Garam masala or Chicken Masala : 1 tsp I used Chicken Masala
- Turmeric powder : 1/4 tsp
- Milk : 2 tbsp
- Mozzarella cheese : 1/2 cup grated (you can use cheddar too)
- Breadcrumbs : for coating
- Oil to shallow fry
- Salt to taste

Notes
You can add any vegetable as per your choice.
You can alter and use your own spin on combination of spices Eg: you can add black pepper powder or coriander powder,meat masala, etc.
You can also dip the cutlets in the plain all purpose flour/maida +water mixture or in semolina-rava and then roll in breadcrumbs till evenly coated, and shallow fry or deep fry it.
You can freeze the cutlets after they are rolled in semolina/ breadcrumbs. Store it in a zip lock bag and freeze for 1-2 weeks. Keep the frozen cutlets in room temperature for an hour before frying.

this is the first time I am seeing a noodle cutlet. how interesting
