Kerala Style Prawn Fry Recipe – Nadan Chemmeen Varuthathu Recipe
Preparation time : 10 mins
Cooking time : 10 mins
Serves : 4
Ingredients:
Rice flour : 1 tsp
Curry Leaves : 2 sprig
To grind into paste :
Shallots/Pearl Onions /Red Small Onion : 4-6 or substitute with one small sized onion
Ginger : 1″ piece
Garlic : 2-4 small cloves
Cumin Seeds : 1 tsp
Dried Red Chilly : 4-6 (or to your tolerance level) or use red chilly powder : 2 tsp
Turmeric Powder : 1/4 tsp
Whole Black Pepper Corns : 1/2 tsp (add or reduce according to your tolerance level)
Lemon Juice : 1 tsp
Curry Leaves : few
Salt to taste
How to make Nadan Chemmeen Varuthathu – Kerala Style Prawn Fry :
1. Clean and de-vein prawns and keep it aside.
2. Grind
together all the ingredients listed above ‘To grind into paste’:
to a smooth paste, adding a small amount of water.
3. Marinate the prawns/shrimps with this above grounded paste and refrigerate it for 10 minutes to 1/2 hour.
4. Heat 2 tbsp of oil in a pan; add curry leaves and saute for couple of mins; add marinated prawn and combine well.
5. Just before frying mix in rice flour. (Note : This step is purely optional, by doing this,it will help to bind the masala well and also gives
brilliant crispy coating for these spiced prawns.)
6. Saute and cook till the water from prawn has been absorbed and the prawns are coated with the marinade.Stirring occasionally.
7. Drizzle remaning1tbsp of coconut oil and adjust the salt. Fry over very low heat for a few more minutes or till both sides are crispy. (Notes:Take care not to scorch the marinade.)
8. When the prawns start to crisp and turn golden brown remove from heat.Serve warm with steamed rice and enjoy!

Notes :
- This is a very hot dish. Add or reduce chilli powder and pepper
powder according to your taste. Optional – To bring down the heat, if
you want can substitute red chilli powder with kashmiri chilli powder or
paprika. - Using coconut oil enhance the authentic taste and flavor.

Hi…I had tried this one before, and my husband and in-laws had loved it! This time I'm planning for a bigger group…with 2 kg prawns( before scaling). Would probably be around 1 kg scaled and deveined. Shall I double the recipe? Please let me know…
