Ingredients:
Ash gourd /Elavan /Kumbalanga : 1 cup (diced)
Cow peas /Red eyed Beans/Vanpayar : 1/2 cup
Pumpkin /Manthanga /Mathan : 1 cup (diced)
Green chillies : 3-4 nos (slit lengthwise)
Thin coconut milk /Radaam paal : 1 cup
Thick coconut milk/Thani paal : 1/4 cup
Curry leaves : a sprig
Coconut oil : 1 tbsp
Salt to taste
How to make Olan – Kerala Olan – Ash Gourd & Cowpeas Stewed in Coconut Milk :
1. Soak the black eyed beans overnight, approximately around 6-8hrs and pressure cook or boil it.
2. Remove the skin from the ash gourd and pumpkin and chop into small pieces.
3. Once the bean is half cooked, add the chopped pumpkin, ash groud and add the thin coconut milk into it.
4. Add salt and green chilies, once the vegetables are cooked well; add the thick coconut milk into it.
5. Reduce the fire to low and stir it slowly until the mix is cooked well and remove from the fire.
6. Season with coconut oil and a sprig of curry leaves.
7. Mix well and cover it and allow it to stand for 10-20 minutes before serving. (Note : This will help the dish to absorb the flavour of curry leaves and coconut oil.) Serve and Enjoy!
