Hello, To be honest I'm not really sure what would make a good replacement for spring roll wrappers because any dough made with a gluten free flour will probably lack the elasticity and rigidity needed to hold together while deep frying but I've seen some recipes on internet where they have used sheets of Phyllo dough and with all purpose flour/maida dough.Hopefully that helps!
