Carrots : 4 (medium, peel and grated)
Grated coconut : 1/4 cup
Mustard seeds : 1/2 tsp
Urad dal : 1/2 tsp
Green chillies : 2-3 or to your spice level (slit in center)
Curry leaves : 1 sprig
Salt to taste
Oil : 2 tsp
Method of Preparation :
1. Heat the oil, add the mustard seeds, when its starts to splutter add the urad dal.
2. Add the grated carrots, green chillies, salt, sprinkle 3 tbsp of water on it; cover and cook on medium heat for 8-10 mins.
3. Add the grated coconuts and curry leaves and stir well.
4. Remove from the fire and serve hot with rice and Enjoy!
